Cellarest Beer Project was designed to be a small batch, regionally influenced brewery that showcases how unique beer can be to its environment with a focus on sustainability. Utilizing three different types of wood for fermentation, lagering and aging we will channel the life of the wood into our beer to bridge the gap between old world techniques and new world technology.

  • Tina and Her Pony

    Experience the hauntingly beautiful harmonies and rich instrumentation of Tina & Her Pony, an Indie Appalachian Folk act with roots in Asheville and the high desert of Taos. Fronted by classically trained musician Tina Collins, the band blends folk traditions with fresh influences—layering cello, banjo, pedal steel, and acoustic guitar with touches of jazz organ and synth. Their latest album, Marigolds (2023), explores themes of transformation and renewal, expanding on a decade of critically acclaimed releases. With a sound reminiscent of Gillian Welch and Watchhouse, Tina & Her Pony delivers an intimate yet expansive musical journey you won’t want to miss.

  • Crystal Fountains

    Crystal Fountains is an americana/folk/bluegrass band from North Carolina that plays traditional bluegrass as well as original music that has elements of jazz, blues, country and rock. Pulling from a variety of influences with an emphasis on vocal harmonies reminiscent of the Delmore Brothers, Stanley Brothers and The Louvin Brothers, to energetic upbeat originals that will keep your toes tappin.

  • Smolder

    Foudre Fermented Smoked Baltic Porter, ABV: 7.8%

    Made from a base of Epiphany Vienna, Smoked malt, roast, chocolate & black wheat malt along with Riverbend oat malt & Pilsner.

    Hopped with Michigan grown Cascade. Fermented slow and cold inside our acacia wood foudre.

  • Malefy

    Foudre Fermented Mole Stout, ABV: 5.5%

    Made from Riverbend Southern Select & oats.

    Epiphany roast, chocolate & crystal. Fermented in our acacia wood foudre with our preferred German lager yeast. Rested on dates & cinnamon along with New Mexican, Pasilla Negro, Cayenne & Chipotle Morita chilies.

  • Peiskos

    Foudre Fermented Breakfast Stout, ABV: 5.5%

    Made from Riverbend Southern Select & oats.

    Epiphany roast, chocolate & crystal. Fermented in our acacia wood foudre with our preferred German lager yeast. Rested on Madagascar vanilla beans and Mexican Bulfrano Clemente coffee beans from our friends at Cooperative Coffee Roasters.

  • Mangata

    Oak Rested Polotmavý Lager, ABV: 5.5%

    Czech-style pilsner, double kilned munich & oats from Riverbend with black wheat & biscuit malt from Epiphany.

    Single decoction mash & hopped with Hallertau Mittelfrüh throughout the boil. Fermented with our preferred German lager yeast and rested cold in our oak puncheons for eight weeks.
